| The vineyard of Chevalier-Montrachet is situated immediately above the portion of Le Montrachet lying in Puligny, and directly borders Chassagne. It covers 18.2 acres, and, in contrast to the adjacent grands crus, over 75 percent of Chevalier-Montrachet is held by four proprietors, among them Domaine des Héritiers Louis Jadot, which owns half of the grand cru parcel of Les Demoiselles, situated wholly within Chevalier- Montrachet and vinified under Jadot's estate label. Chevalier-Montrachet's average annual production of 23,000 bottles, representing a yield only slightly over half the legal maximum, make this wine even more of a rarity than Le Montrachet itself, which Chevalier rivals in quality and price.
Maison Louis Jadot carries out a traditional vinification in primarily new oak casks on the limited quantities of fruit procured from this rarefied grand cru each harvest. Slightly more delicate and austere than Le Montrachet, with an equilibrium of unequalled refinement, Chevalier-Montrachet is characterized by a rich depth of honey and toast flavors on the palate, foreshadowed in the bouquet, which carry into a subtle, lingering finish.
